Our star chefs, led by Niilo, are sharpening their knives and beating the eggs. Cafe serves both hot and cold dishes, with onions taking centre stage – old classics and new arrivals alike. Chanterelle pies, onion pies and carrot-and-egg pies. Hot cinnamon buns come straight from the pan, if you happen to be in the right place at the right time. Cream cheese cakes with dandelion wine, spruce shoots and raspberries are setting before being served. The coffee machine filters have been changed. The drinks menu is already being rewritten. Cucumbers are bathing in brine until someone catches them straight from the jar. Every piece of traditional Seto cured cheese contains at least three caraway seeds.
Music plays all day long, both indoors and outside. Our tireless house band Baaba ja Ka will be joined by invited and surprise performers, ranging from punk to zither music and from Seto leelo to popular songs. From time to time, Seto leelo cuts straight through the soul. Singers from many leelo choirs will gather to join their voices. The garmons and bubens (drums) are lined up under the piano – those who know how, play them.
