Third time at Seto Kostipäiv, third time with fish. But this year, chicken hearts are joining the table too – with onions, because sõs om hää! (that’s when it’s good!)
Fish is still the star of the show – lightly salted trout, delicious salmon and seasonal fish you will not find anywhere else. But now there is a newcomer alongside them: chicken hearts fried with onions. First, they rest in marinade overnight, then they are slowly cooked for five hours until tender, and finally given a quick finish in a sizzling hot pan with onions. Three essential steps to conquering the world.

Vanaase Farm was built in 1900. Five years ago, we began restoring it, and today it is home to a meditation retreat centre, a garden, a pond and beautiful views.
Eat, drink and take in the scenery – the Luhamaa landscape opens up here just as it should. On hot days, you can cool off in the large pond. If rain or storms arrive, we move indoors – to the dining room or under the garden shelter. Throughout the day, we play waltzes and foxtrots from old shellac records and open a small – but probably Setomaa’s only – vinyl record pop-up shop.
